A quick and easy lunch that utilizes your leftover meats in the most delicious way! Using simple ingredients and incredibly tasty condiments, leftovers have never tasted so good!
Serves: 2-3
Ingredients
(use organic ingredients where possible)
- 2-3 slices of leftover meat or cold cuts of your choice
- 1 cup mixed lettuce
- 5 cherry tomatoes
- 1 sweet potato, roasted and cooled
- 3-4 florets of broccolini, steamed and cooled
Directions
- Combine all ingredients into a salad.
- Add 1 or 2 tablespoons of each of pesto and mayonnaise to dress.
PESTO
Ingredients
(use organic ingredients where possible)
- 1 bunch basil
- 100g walnuts
- 50g parmesan, freshly grated
- 1 tsp apple cider vinegar
- 5 tbsp Changing Habits Inca Inchi Oil (or cold-pressed olive oil)
- 1 pinch Changing Habits Seaweed Salt (or sea salt)
- Freshly ground black pepper
Directions
- Place all ingredients into the Thermomix.
- Mix until combined to the consistency you prefer.
MAYONNAISE
Ingredients
(use organic ingredients where possible)
- 1 clove garlic
- 250ml or 8 oz Changing Habits Inca Inchi Oil (or cold-pressed olive oil)
- 1/2 a lemon, juiced
- 1 tsp apple cider vinegar
- 2 egg yolks (eggs must be at room temperature)
- Sea salt
Directions
- Place egg yolks, apple cider vinegar, lemon juice, garlic, salt, and pepper in Thermomix and mix until combined.
- Slowly pour oil onto the lid of the Thermomix to dispense oil slowly into the mix while the machine is running.
- Once all the oil has been added, increase the speed of the machine until completely mixed and has a thick consistency.
NOTE*
If you don't have a Thermomix, you can use a blender or food processor.
