A really filling version of a fattoush!
Serves: 1
Ingredients
(use organic ingredients where possible)
SALAD
- ½ yellow capsicum, large dice
- ½ green capsicum, large dice
- 8 cherry tomatoes, cut into halves
- ½ long red chili, chopped roughly
- ½ bunch parsley, chopped roughly
- ½ zucchini, cut into bite-sized pieces
- ½ cup basil leaves
- 1 slice essene bread, ripped into bite-sized pieces
DRESSING
- 1 tbsp apple cider vinegar
- 1½ tsp udo's oil
- 1½ tsp maple syrup
- Salt and pepper
Directions
- Mix the salad dressing well in a bowl and drizzle over your salad.
- Season well with salt and pepper.
