Corn salsa and guacamole made with simple ingredients! Corn is loaded with flavonoids (which, among other things, protect against lung and oral cancers), antioxidants (such as beta-carotenes), and lutein.
Serves: 1
CORN SALSA
Ingredients
(use organic ingredients where possible)
- 1 fresh raw corn on the cob
- 1 tomato, diced finely
- a slice of red onion
- 1 red capsicum, diced finely
- ¼ cup fresh coriander, chopped roughly
- ¼ tsp cumin
- Fresh lime, squeezed
- Salt and pepper
- Chopped fresh chili (optional)
Directions
- Remove the kernels from the cob and place in the bowl.
- Add the rest of the salsa ingredients.
- Season with salt and pepper and a good squeeze of lime.
GUACAMOLE
Ingredients
(use organic ingredients where possible)
- ½ avocado
- 2 slices cucumber, diced finely
- Salt and pepper
- Flax crackers (optional)
Directions
- In a bowl mash the avocado.
- Add the cucumber, season well with salt and pepper.
- Place it on a plate with the salsa.
- Add flax crackers for more flavor.
