Serves: 2
Ingredients
(use organic ingredients where possible)
FOR THE DRESSING
- 1 tsp udo's oil
- 1 tsp mustard
- 1 tsp maple syrup
- ½ lemon, juiced
- Salt, to taste
- Black Pepper, to taste
FOR THE SALAD
- Handful kale, thinly sliced
- 1 red apple, thinly sliced
- ¼ purple cabbage, thinly sliced
- ¼ red onion, thinly sliced
- Handful activated nuts
- Salt, to taste
- Black Pepper, to taste
Directions
- To prepare the dressing, whisk together the ingredients, season and set aside.
- To prepare the salad, rinse and chop the kale.
- Put in a large bowl, season and massage until the kale leaves soften.
- Add all the salad ingredients to the bowl and drizzle with the dressing.
- Toss to coat and serve.
